June 2022 Canning Classes

The June Class schedule is in for the Hernando County Cannery by the Hernando County Growers’ Association! The Cannery is located at 15487 Citrus Way in Brooksville, Florida. All classes are held on-site.

Cannery General Store is open Tuesday through Friday from 11 am to 5 pm and Saturday and Sunday from 11 am to 4 pm. The Farmer’s Market is open Sunday’s Year-Round from 11:00 A.M. – 4:00 P.M.

June 2022 Canning Classes

Sign up as classes fill quickly for some of these. 

What you get when you pay for a class:

1) Knowledge! You get to learn how to make a new recipe from scratch. You get to learn how to can that recipe. You get to learn how to utilize that canned product into a meal for you and/or your family.

2) You get a snack or meal, depending on what the class is! This is so you can taste what you made and to get one idea of how to use use that jar.

3) You get to meet new people and make new friends! Lots of people have made new and lasting friendships from our classes.

4) By purchasing a class, you are also supporting the Cannery! Every class helps keep our doors open by helping us pay our bills. We are a non-profit Organization and rely on donations, classes, grants, Cannery store purchases and Volunteers to keep us up and running. 

5) You get to shop in our Cannery store and check out what local small businesses have to offer while waiting for your jars to process. Every purchase helps a local small business and helps support the Cannery!

6) You always go home with 1 jar of what you made that day, a recipe to make it again on your own and the hands-on experience!

June Introduction to Canning Series 

Description: This is a four-week hands-on preservation course that involves both water bath and pressure canning.

The course will focus on safe canning practices including sterilization, how to properly fill jars, how to ensure a proper seal, and how to process using both methods. 

Every week you will go home with a jar of what was made in class! 

We also always taste what is made so you have an idea of what to expect. 

Please bring a small box to transport your jar home in.

Week 1 – Water Bath Canning – Salsa 

Friday June 3, 2022 

5 pm to 8 pm 

In this class we will learn how to water bath can Salsa!

Week 2 – Water Bath Canning – Jam or Jelly (TBA) 

Friday June 10, 2022 

5 pm to 8 pm 

In this class we will be learning to make an in-season fruit jam or a jelly. The jam will be announced as we get closer to the class so we can see what the local farmers will have available.

Week 3 – Pressure Canning Vegetables 

Friday June 17, 2022 

5 pm to 8 pm

In this class we will be pressure canning in season Vegetables. 

We will discuss how the vegetables you use will determine the time needed for processing. We will also make cornbread from scratch.

Week 4 – Pressure Canning Recipes – Chicken Pot Pie 

Friday June 24, 2022 

5 pm to 8 pm

In the final class for the course, we will make Chicken Pot Pie Starter. This is a great simple recipe that you can grab right off the shelf, heat up and eat out of the jar or make a quick pot pie with! We will also learn how to make the pie crust in class. All classes are non-refundable. Total cost for the course is $150.

Roasted Salsa Verde

Date: June 4, 2022 

Time: 10:30 am to 1:30 pm 

Teacher: Janet 

Description: This traditional salsa is equally delicious served with tortilla chips or as a base for enchiladas. We will be using this as a base for the Chicken Chili Verde class. All Students will go home with a jar of product made in class. This is a hands-on class. Price: $35 per person. This class is limited to a max 8 persons. Classes are non-refundable.

Chocolate Cherry Jam

Date: Thursday June 9, 2022 

Time: 10:30 am to 1:30 pm

Description: We will prepare and jar this wonderful jam. All Students will go home with a jar of product made in class. This is a hands-on class. Price: $30 per person. This class is limited to a max 8 persons. Classes are non-refundable

Chicken Chili Verde 

Date: June 11, 2022

Description: Prepared salsa verde adds tang to this chili recipe and pairs beautifully with the chicken and beans.

Basil Garlic Tomato Sauce

Date: Thursday, June 16, 2022 

Time: 10:30 am to 1:30 pm

Description: Sweet, savory, and tart, this Basil Garlic Tomato Sauce is seasoned to perfection. You can use it for topping chicken or fish, meatballs and spaghetti, soups or stews. It is also great as a pasta sauce for a meatless dinner. All Students will go home with a jar of product made in class. This is a hands-on class. Price: $35 per person. Corn Cob Jelly and Canned Corn 

Date: Thursday June 23, 2022 

Time: 10:30 am to 1:30 pm

Description: In this class we will be canning corn and then waste not want not, utilizing the corn cobs to make a delicious Jelly! Corn cob jelly is also called “poor mans honey”. It’s a mild jelly that tastes like a sweet honey with a very mild corn flavor. It’s great on cornbread or toast!!!

Peach Pie Filling

Pickled three Bean Salad

Date: June 25, 2022 

Time: 10:30 am to 1:30 pm

Description: And here you thought you can’t can salad! This bean salad is a time-honored crowd pleaser. When you serve it, drain, then toss with a tablespoon of oil. Yum!
